Why fields arrive empty at the other end
A fillable form stores what you typed in fields that sit separately from the page content, not inside the page itself. PDF viewers differ in how they render those fields, so a form can look filled on your machine and appear blank to someone opening it in another application or in a browser, and the values can vanish when printed. Flattening draws the values into the page and removes the fields, so what you see becomes what everyone sees, in any viewer.
And stopping edits after you send
The second reason to flatten is that the fields stay writable for the recipient. Anyone who opens the form can change an amount, a date, or a name, then forward it as though it were what you sent. After flattening there are no fields to type into. That does not make the file completely uneditable, since a capable PDF editor can modify any file, but it closes the easiest and by far the most common route.
Flattening is not password protection
These two get confused often. Flattening removes the fillable fields; afterwards the file still opens normally with no password, and its text stays copyable and searchable. Password protection controls who can open the file in the first place, and it lives in the Protect PDF tool. If you are sending a form that carries sensitive data, combine them: flatten first, then add a password.

I got a message saying the file has no fields. What does that mean?
It means the file is not a fillable form, so there is nothing to flatten. That happens when the file was scanned or exported as fixed pages in the first place, and in both cases your data is already drawn into the page.
Is the text still copyable and searchable afterwards?
Yes. The values are drawn into the page as text rather than as an image, so they stay selectable, copyable, and searchable. They are simply no longer an editable field.
I also need to sign the form. What is the right order?
Sign first with the Sign PDF tool, then flatten, so you end up with one copy carrying both your signature and data that is protected from editing.
